State Cheese Production Continues to Climb

Wisconsin cheese plants made more product during January when compared to the same month a year earlier. According to the latest dairy product summary from the USDA, the state produced 277.9 million pounds of cheese in January. That was a slight 0.3 percent increase over last year, but 0.8 percent below this past December.

Nationally, about 1.12 billion pounds of cheese was produced in the United States in January. That was a fractional 0.5 percent hike from 2020, but 1.2 percent lower than the amount manufactured during the previous month.

Wisconsin's production of American cheese increased as the state produced 92.1 million pounds, about 5.8 percent more than last year, and 0.2 percent above last month's production. Cheddar output rose 4.0 percent compared to 2020 to total 63.8 million pounds, and went up 0.8 percent from the month earlier. Italian cheese production was at 135.7 million pounds, about 3.5 percent below last year, and 1.9 percent lower for the month. And Mozzarella produced in Wisconsin totaled 85.1 million pounds--about 4.3 percent less than January 2020, but 0.2 percent above December 2020.

Dry Whey output in Wisconsin was recorded at 27.8 million pounds, which was up 11.9 percent from last year, and a slight 0.5 percent increase compared to last month.
