State Cheese Production Falls for Third Straight Month

Wisconsin cheese factories manufactured less product during the month of May when compared to the previous year. According to the latest dairy product summary from the USDA, the state produced 289.5 million pounds of cheese during the month. That was 1.8 percent less than last year, but 1.8 percent higher than this past April (which had less days on the calendar).

Nationally, about 1.19 billion pounds of cheese was produced in the United States in May. That was a 2.1 percent increase from 2021, and 2.5 percent more compared to the amount manufactured during the previous month.

Wisconsin's production of American cheese decreased as the state produced 88.5 million pounds, about 4.3 percent less than last year, but 0.6 percent above last month's production. Cheddar output also fell by 3.4 percent compared to 2021 to total 59.3 million pounds, but rose 0.3 percent from the month earlier. Italian cheese production was at 137.6 million pounds, about 2.0 percent over last year, but 1.1 percent lower for the month. And Mozzarella produced in Wisconsin totaled 89.4 million pounds--up 1.9 percent from May 2021, but 1.3 percent less than April 2022.

Dry Whey output in Wisconsin was recorded at 24.9 million pounds, which was up 4.5 percent from last year, but 10 percent lower compared to last month.
