State Cheese Production Fell in September

Wisconsin cheese production fell for the second month in a row during September. According to the USDA's latest dairy product summary, the state produced 276.4 million pounds of cheese during the month. That was 1.4 percent less than last year, but a slight 0.7 percent increase over this past August.

Nationally, about 1.09 billion pounds of cheese was produced in the United States in August. That was a 1.1 percent increase from 2019 and 0.6 percent more than the previous month.

Wisconsin's production of American cheese increased as the state produced 85.1 million pounds, about 8.3 percent more than last year, but down 0.4 percent from last month's production. Cheddar output also rose 8.7 percent compared to 2019 to total 58.8 million pounds, but went down 1.6 percent from the month earlier. Italian cheese production was at 132.6 million pounds, about 6.4 percent below last year, but 3.1 percent higher for the month. And Mozzarella produced in Wisconsin totaled 86.4 million pounds--5.5 percent below September 2019, but 1.6 percent more than August 2020.

Dry Whey output in Wisconsin was recorded at 20.8 million pounds, which was down 14.5 percent from last year, and 7.8 percent lower compared to last month.
