State Cheese Production Rose During April

Monthly cheese production numbers for the Dairy State were higher in April compared to a year ago. The USDA reports that Wisconsin's dairy plants produced 201.9 million pounds of cheese during the month--which was up a slight 0.1 percent from last year, but 3.6 percent lower than the month earlier.

Nationally, 815 million pounds of cheese was made--1.4 percent more than the same month in 2007, but 2.4 percent less than the March 2008 production totals.

Wisconsin's production of American cheese increased as the state produced 69.3 million pounds, about 8.1 percent more than last year, but 0.5 percent below last month's production. Cheddar output rose 9.1 percent compared to 2007 to total 55.9 million pounds, but was 1.9 percent lower than the month earlier. Italian production was at 94.9 million pounds, down 3.9 percent below last year, and 6.2 percent lower for the month. And Mozzarella in Wisconsin totaled 68.7 million pounds--down 5.2 percent from April 2007, and 6.2 percent less than March 2008.

Butter production was higher as total output rose by 12.6 percent from 2007 to total 35.5 million pounds. That was also 6.2 percent more than last month.

And Dry Whey production was recorded at 27.3 million pounds, which was 3.9 percent above last year, and 4.3 percent more than last month.
