Wisconsin Still Leading the Nation in Dairy Product Output
Wisconsin Ag Connection - 05/10/2019

New figures have confirmed that the Dairy State put out more cheese and other dairy products than any other state during the past calendar year. According to the National Ag Statistics Service, Wisconsin produced an all-time high of 3.42 billion pounds of cheese varieties in 2018. That was more than the previous record of 3.37 billion pounds set in 2017.

There were 118 dairy plants in production during 2017, which was two fewer than the previous year.

The report shows that total production of American, Cheddar, Italian, Mozzarella, Swiss, Hispanic and Muenster cheeses were all up last year in Wisconsin, while the output of other types of varieties fell. Dry whey production was also lower.

Meanwhile, total U.S. cheese production was 13 billion pounds, about 3.0 percent above 2017 production levels. Wisconsin accounted for 26.3 percent of the nation's production.

The state's agriculture department is expected to release statistics on last year's specialty cheese production in the coming weeks.
