For the fifth consecutive month, Wisconsin cheese plants made more product during May when compared to the same month a year earlier. According to the latest dairy product summary from the USDA, the state produced 295.5 million pounds of cheese in May. That was 5.1 percent more than last year, and 4.6 percent higher than this past April.
Nationally, about 1.16 billion pounds of cheese was produced in the United States in May. That was a 5.0 percent increase from 2020, and a 1.8 percent hike compared to the amount manufactured during the previous month.
Wisconsin's production of American cheese increased as the state produced 93.2 million pounds, about 5.4 percent more than last year, and 1.4 percent above last month's production. Cheddar output also rose 0.9 percent compared to 2020 to total 62.9 million pounds, and also rose slightly from the month earlier. Italian cheese production was at 140.5 million pounds, about 0.4 percent below last year, but 1.5 percent higher for the month. And Mozzarella produced in Wisconsin totaled 92.6 million pounds--down 1.8 percent from May 2020, but 3.9 percent more than April 2021.
Dry Whey output in Wisconsin was recorded at 23.4 million pounds, which was down 6.6 percent from last year, and 1.9 percent lower compared to last month.
