State Cheese Production Continues to Decline



Wisconsin cheese factories manufactured less product during the month of July when compared to the previous year, marking the fifth straight month that dairy product output has declined. According to the latest production summary from the USDA, the state produced 289.6 million pounds of cheese during the month. That was 1.2 percent less than last year, but a slight 0.3 percent increase from this past June (which had less days on the calendar).

Nationally, about 1.16 billion pounds of cheese was produced in the United States in June. That was a 1.1 percent increase from 2021, and 0.5 percent more compared to the amount manufactured during the previous month.

Wisconsin's production of American cheese decreased as the state produced 86.9 million pounds, about 5.1 percent less than last year, but 2.2 percent above last month's production. Cheddar output also fell by 6.1 percent compared to 2021 to total 59.1 million pounds, but rose 5.1 percent from the month earlier. Italian cheese production was at 140.6 million pounds, about 0.9 percent over last year, and 0.3 percent higher for the month. And Mozzarella produced in Wisconsin totaled 90.8 million pounds--up 2.6 percent from July 2021, and 1.1 percent more than June 2022.

Dry Whey output in Wisconsin was recorded at 25.7 million pounds, which was up 3.8 percent from both last year and last month.
