Wisconsin cheese factories were back to producing more product in January after seeing a drop in output at the end of the past year. According to the latest dairy product summary from the USDA, the state produced 291.1 million pounds of cheese during the month. That was 2.8 percent more than last year, but 0.9 percent lower than this past December.
Nationally, about 1.17 billion pounds of cheese was produced in the United States in January. That was a 2.8 percent increase from 2021, and 1.8 percent more compared to the amount manufactured during the previous month.
Wisconsin's production of American cheese increased as the state produced 93.9 million pounds, about 0.7 percent more than last year, and 5.2 percent above last month's production. Cheddar output fell by 4.1 percent compared to 2021 to total 62.6 million pounds, but rose fractionally from the month earlier. Italian cheese production was at 138.9 million pounds, about 2.6 percent above last year, but 1.6 percent lower for the month. And Mozzarella produced in Wisconsin totaled 88.5 million pounds--up 3.0 percent from January 2021, but 2.6 percent less than December 2021.
Dry Whey output in Wisconsin was recorded at 24.8 million pounds, which was down 10.8 percent from last year, and 1.6 percent lower compared to last month.
