Wisconsin cheese factories were back to producing more product in November after seeing its first year-to-year drop in nine month during October. According to the latest dairy product summary from the USDA, the state produced 278.7 million pounds of cheese during the month. That was 1.1 percent more than last year, but 3.7 percent lower than this past September (which had more days on the calendar)
Nationally, about 1.12 billion pounds of cheese was produced in the United States in November. That was a 1.6 percent increase from 2020, but 2.9 percent less compared to the amount manufactured during the previous month.
Wisconsin's production of American cheese decreased as the state produced 83.7 million pounds, about 6.8 percent less than last year, and 5.2 percent below last month's production. Cheddar output also fell by 6.9 percent compared to 2020 to total 57 million pounds, and dropped 5.5 percent from the month earlier. Italian cheese production was at 134.3 million pounds, about 4.5 percent above last year, but 1.2 percent lower for the month. And Mozzarella produced in Wisconsin totaled 84.3 million pounds--up 1.9 percent from November 2020, and 0.8 percent more than October 2021.
Dry Whey output in Wisconsin was recorded at 23.9 million pounds, which was up 16.1 percent from last year, and just fractionally higher compared to last month.
