Cattle producers in Wisconsin can gain valuable insights into raising high-quality beef at a series of free workshops titled "Producing Quality Beef." These workshops will be held at four locations across the state in December and February.
The workshops will delve into the specific physical traits that influence cattle value. A cattle buyer will share insights on what consumers look for and how those preferences translate to higher prices.
Attendees will also learn how seemingly minor factors like mud, manure, and gut fill can impact dressing percentage, which directly affects producer profit.
A discussion on the latest National Beef Quality Audit results will reveal areas for improvement and how to better meet consumer demands.
Participants will even get a firsthand look at common quality defects encountered at packing plants, highlighting their impact on the industry and cattle prices.
The afternoon session focuses on practical application. Attendees will participate in a hands-on learning experience, measuring ribeye and back fat, and practicing quality grade assignment.
Additionally, experts will discuss feeding and management strategies to produce the type of finished cattle packers seek, along with pre-harvest practices that influence meat quality.
