Wisconsin cheese factories manufactured less product during the month of March when compared to the previous year. According to the latest dairy product summary from the USDA, the state produced 296.6 million pounds of cheese during the month. That was 3.0 percent less than last year, but 9.6 percent higher than this past February (which had less days on the calendar).
Nationally, about 1.20 billion pounds of cheese was produced in the United States in March. That was a 1.1 percent increase from 2021, and 8.3 percent more compared to the amount manufactured during the previous month.
Wisconsin's production of American cheese decreased as the state produced 90.7 million pounds, about 5.6 percent less than last year, but 6.5 percent above last month's production. Cheddar output also fell by 7.4 percent compared to 2021 to total 60.2 million pounds, but rose 5.7 percent from the month earlier. Italian cheese production was at 146.1 million pounds, about 0.7 percent below last year, but 11.8 percent higher for the month. And Mozzarella produced in Wisconsin totaled 96.1 million pounds--down 0.9 percent from March 2021, but 18.4 percent more than February 2022.
Dry Whey output in Wisconsin was recorded at 26.3 million pounds, which was down 6.4 percent from last year, but 22.6 percent higher compared to last month.
